Crustless Chicken Fajita Quiche


Keep It Cool Summer Recipe Challenge Winner!

Ingredients:1 tablespoon water
1/2 cup frozen vegetable stir-fry mix
Non-stick spray
4 large eggs
1 cup half ‘n half
1/4 teaspoon fajita seasoning
1 tablespoon chopped cilantro
1 6-ounce package Tyson® Chicken Fajita Strips
1 cup shredded cheddar cheese
12 thin slices ripe avocado
6 tablespoons prepared salsa
6 tablespoons sour cream 
6 cilantro sprigs

Directions:

  1. Place the water and vegetable stir-fry mix in a medium-sized microwave-safe bowl. Cover and microwave on high power for 5 minutes, stirring halfway through cooking. Drain well and set aside.
  2. Coat a 9- or 10-inch microwave-safe quiche or pie plate with non-stick spray; set aside.
  3. In a large bowl whisk together eggs, half ‘n half, fajita seasoning and chopped cilantro until blended. Stir in the chicken strips, cheese and vegetable stir-fry mix. Pour into the prepared pan.
  4. Microwave on high power for 7 to 8 minutes, rotating pan twice during cooking. Let quiche stand for 5 minutes.
  5. To serve, cut quiche into 6 wedges. Top each wedge with two slices of avocado and one tablespoon each of salsa and sour cream. Garnish with cilantro sprig.
