Stuffed Green Peppers with Beef Steak Tips, Scallions and Herbs

Ingredients: 1 package (17 ounces) Tyson® Beef Steak Tips in Bourbon Sauce
1 cup cooked brown rice
1/4 cup chopped scallions
2 tablespoons chopped fresh parsley
1 teaspoon dried oregano
4 medium green bell peppers, tops trimmed and seeds removed
2 teaspoons Panko bread crumbs
Cooking Instructions:
- Preheat oven to 400 degrees Fahrenheit. Coat a shallow baking dish with cooking spray.
- Empty contents of Tyson Beef Steak Tips in Bourbon Sauce package into a large bowl. Using two forks, shred the meat into 1/4-inch thick pieces.
- Add rice, scallions, parsley and oregano and mix well.
- Spoon the mixture into prepared bell peppers and place side-by-side in prepared dish. Sprinkle the tops with bread crumbs (1/2 teaspoon per pepper).
- Bake for 25-30 minutes, until peppers are tender and tops are golden brown.
**Note: Choose a baking dish that fits the peppers snugly so they don’t tip over. You may also slice a thin strip from the bottom of each pepper to make it flat. Just make sure not to slice through to the center.**
